In recognition of National Avocado Day on July 31, California Health Sciences University highlights the nutritional value and versatility of avocados. Their creamy texture and mild flavor make them an easy addition to a variety of meals and snacks, while their nutritional content provides several essential nutrients.
Avocados provide heart-healthy monounsaturated fats as part of an eating pattern that supports cardiovascular health. They also supply dietary fiber, which aids digestion and promotes fullness. Additionally, avocados contain potassium, folate, vitamin K, vitamin E, and plant compounds that support overall wellness.
One of the best ways to enjoy the nutritional benefits of avocados is with an easy homemade guacamole recipe. Fresh, flavorful, and versatile, healthy guacamole tends to pair perfectly with vegetables, whole-grain tortilla chips, tacos, salads, sandwiches, and grain bowls.
Easy Homemade Guacamole Recipe:
Ingredients:
- 2 ripe avocados
- 1 small tomato, diced
- ¼ cup onion, finely diced
- 1–2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- 1 small jalapeño, finely diced, optional
- ¼ teaspoon salt, or to taste
- Black pepper, to taste
Directions:
- Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
- Mash the avocado with a fork until it reaches the desired texture.
- Add tomato, onion, cilantro, lime juice, jalapeño, salt, and black pepper.
- Mix gently until combined.
- Serve with fresh vegetables, whole-grain tortilla chips, or use as a topping for meals.
Nutrition Tip:
For a healthy, balanced snack, pair homemade guacamole with fresh vegetables such as bell peppers, carrots, cucumbers, or celery. This nutritious combination provides fiber, vitamins, minerals, color, and a satisfying crunch. National Avocado Day is the perfect opportunity to celebrate how simple, whole-food ingredients can deliver both nutrition and flavor but in California, we’re lucky enough to enjoy them every day of the year!
